Rubén Domínguez is a researcher at the Centro Tecnolóxico da Carne (CTC). He has completed Technical Agricultural Engineering, a Degree in Food Science and Technology, and a Master's in Food Science and Technology at the University of Vigo. He obtained his PhD in Food Science and Technology (Universidade de Vigo) in 2012. He has been a researcher in 61 R&D projects related to meat science and food technology, gaining extensive experience in the field of food technology. During his professional career, he has acquired great skills in food development, reformulation, and analysis. Among the techniques used, it is worth highlighting the extensive experience in the use, development, and validation of chromatographic techniques and mass spectrometry. He has extensive experience in the use and optimization of microencapsulation techniques for the incorporation of healthy oils and bioactive compounds in various food matrices. Currently, his main lines of research are: (i) Development of new, healthier meat products; (ii) Identification, separation, and use of functional molecules as ingredients in food; (iii) Incorporation of bioactive compounds and development of functional foods; (iv) Use of active packaging to protect food against oxidative and microbial degradation; (v) Evaluation of the quality of the carcass, meat, and meat products of different species; (vi) Use of green and emerging technologies for the recovery of active biological compounds from plant matrices and agri-food co-products; (vii) Application of chromatography and mass spectrometry techniques for food analysis.
Regarding his research experience and R&D management, his main achievements are:
1. He is the editor of Q1 (“Food Science and Technology” field) international scientific journals, including "Foods", "Antioxidants" and "Current Research in Food Science", and other prestigious journals such as "Frontiers in Animal Science", "Meat Technology" and "Ciência Rural". He acts as guest editor of several special issues of international journals (MDPI, ElSevier, & Frontiers).
2. He is a reviewer for multiple international scientific journals. He has assisted as an invited reviewer of scientific articles (>125 articles, >30 journals) and book proposals (10 books, ElSevier).
3. He is an International Expert Evaluator of R&D projects of the “Concurso de Proyectos de Investigación Aplicada y Desarrollo Tecnológico” (FONDECYT) from Perú and Chile governments (2021-2022).
4. He has published 292 Scientific Publications, including 221 research articles, reviews, and editorials in the highest impact factor journals in the Food Science and Technology field, most of them in the first quartile (121), and 130 conference communications, mostly international. His h-index is 63 with 13,492 citations in Scopus. He has participated in 61 R&D projects as a research collaborator [12 international (EIT, Action Cost, SUDOE; Horizon Europe, Erasmus +, PRIMA, H2020), 2 international cooperation, 7 national, 3 international networks, 2 Competitive Reference Groups, and 35 regional]. He is the editor of 4 international books (ElSevier & Springer) and has contributed 67 chapters in international and national books. Moreover, Rubén Domínguez had constant meetings and seminars with the companies and sectors involved in the projects and potential stakeholders who have an interest in the results or research lines coordinated and co-directed by him.
5. Has strong teamwork skills and a growing number of fruitful national and international collaborations. He has actively participated in the management and coordination tasks of the International Research Networks (Healthy Meat; Cyted 119RT0568) and (AlProSos; Cyted 125RT0165), and two Competitive Reference Groups [(Functional Meat; IN 607 A 2019/01) & (Functional Food; IN 607 A 2023/01)]. In these research groups, he has coordinated and led the research lines, as well as co-directed, guided, and managed the relationships between the International Groups involved. He has co-directed and led the different research lines of the CTC, included in the research projects in which he has participated. He has been responsible for the management of research actions and administrative activities, while managing communication and coordination between different international research groups and project partners, demonstrating his independence and leadership.
His scientific production has been very relevant and has reached top positions in the world rankings, and has been awarded international mentions and recognitions:
- Recognized as a Highly Cited Researcher (HCR) by "Web Of Science" in the year 2022 in the "Cross-Field" category.
- Included in the Stanford List (Stanford University) consecutively in the last five years (2021, 2022, 2023, 2024 & 2025) within the 2% of the most cited researchers in scientific publications.
