He is Director of the Master's Degree in Hydrology and Thermal and Sports Medicine (IDROMET) and the Postgraduate Course in Ketogenic Diets and Nutritional Therapies: Supplements and Nutraceuticals (NUTRIKETO). Both activated at the University of Salerno.
Since 2017 he is Scientific Director of the NutriKeto _Lab University Clinical Research Laboratory at the Moscati di Avellino Hospital
Main topics of research are:
- Chemical, nutritional and biological characterization of food plant species: the investigation involves the analysis of primary metabolites to evaluate nutritional value, isolation and identification of secondary metabolites, considered chemical markers, useful to quality control and development of integrated analytical techniques for determination of qualitative and quantitative profile of plants dried extracts used in food integration.
- Study of biological properties of food plants and/or their components to identify the components responsible of nutritional, functional, therapeutic and/or toxic effects and evaluation of their biological and pharmacological activity.
- Quality control and safe of foodstuff matrices, food supplements, dietetic products and water: the activity involves the development of instrumental analytical techniques applied both to water and foodstuff matrices and to characterization of Mediterranean typical productions by using of different chromatographic techniques as GC, GC-MS, HPLC-DAD, HPLC-MS. The quality control regard the investigation on environmental contaminants in mineral water, surface water, thermal water, air, foodstuff, animal feeding, etc. and the analytes principally considered are PCBs, mycotoxins, phytopharmaceutic derivatives.
Prof. Rastrelli’s group is currently cooperating with recognized Italian and Foreign partners.
